  • 2 small packs of mini mozzarella – €1.29 x 2
  • 1 small jar of pesto basil – €0.99
  • 250g cherry tomatoes – €0.99

For a fully vegan version, substitute mozzarella with vegan cheese or marinated tofu, and opt for a vegan pesto.

2. Caramelized Onion & Spinach Puff Pastry Tarts

(Vegan-friendly option)
Cost: ~€6.50 for 50+ pieces

These bite-sized puff pastries are party favorites and can be made in advance. They’re light, savory, and perfect for snacking while mingling.

Ingredients:

  • 2–3 sheets of store-bought puff pastry – ~€1.50
  • Frozen spinach blocks – €1.00
  • 2–3 onions – €0.80
  • Olive oil, garlic, and seasoning – already at home

Tip: Pre-cook the filling the night before, then bake the pastries fresh on party day.

Though I wanted to keep things vegetarian, I added baked chicken wings as a last-minute treat for my non-vegan friends. A simple, low-cost protein option that required zero effort — just pop in the oven.

🧑‍🍳 Quick Tip: You can make your own by buying raw wings (~€2.50/kg) and marinating them in soy sauce, garlic, paprika, and chili powder overnight.

📝 Vegan Alternative: Replace wings with cauliflower bites or crispy tofu nuggets!

4. Vegan Tofu Skewers (Tofu Şaşlık)

Cost: ~€5

Tofu skewers are a great way to add a protein-rich, fully vegan option. Marinate cubed tofu in soy sauce, paprika, and a bit of lemon, then bake or grill with veggies like bell peppers and onions.
Ingredients:

400g firm tofu – €2.00
1 red bell pepper – €0.69
1 green bell pepper – €0.69
1 large onion – €0.30
Marinade: soy sauce, lemon juice, garlic, olive oil (already at home)
Skewers (optional) – €1.00 (or use toothpicks)
Instructions:

500g rice – €1.00
300g frozen mixed vegetables – €1.00
Soy sauce, salt, pepper, garlic (pantry staples)
2 tbsp sesame oil or sunflower oil – already at home
1 onion – €0.30
2 eggs (optional) – €0.70 (if non-vegan)
Instructions:
Cook and cool rice ahead of time.
Stir-fry onion and garlic, add veggies.
Mix in rice, soy sauce, and scramble in eggs (optional).
🌱 Make it vegan by skipping eggs or using scrambled tofu.

7. Stir-Fried Chinese Vegetables

This simple dish makes a healthy, colorful addition to the table. Use seasonal or frozen veggies and stir-fry with a touch of oil, garlic, and seasoning.

Instructions:
Chop all veggies into bite-sized pieces.
